  • Olive oil - 1 tablespoon (for cooking)
  • Parmesan cheese - 2 tablespoons (grated, optional for serving)

Steps

  1. In a medium bowl, combine almond flour, psyllium husk, baking powder, and salt.
  2. In a microwave-safe bowl, gently heat the cream cheese until softened (about 20-30 seconds).
  3. Add the softened cream cheese and egg to the dry ingredients, mixing until a dough forms.
  4. Knead the dough gently on a clean surface for about 1-2 minutes until smooth.
  5. Divide the dough into four equal parts. Roll each part into a long rope, about 1 cm thick.
  6. Cut the ropes into 2 cm pieces to form the gnocchi.
  7. Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water.
  8. Once the gnocchi float to the surface, cook for an additional 1-2 minutes, then remove with a slotted spoon.
  9. In a skillet, heat olive oil over medium heat and sauté the cooked gnocchi until golden brown, about 3-4 minutes.
