Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 200 grams
  • Parmesan cheese (grated) - 50 grams
  • Cream cheese - 100 grams
  • Cooked chicken breast (shredded) - 150 grams
  • Heavy cream - 100 ml
  • Garlic powder - 1 teaspoon
  • Italian seasoning - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Fresh parsley (chopped) - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets. Steam the florets until tender, about 8-10 minutes.
  3. Once steamed, drain the cauliflower and let it cool slightly. Then, using a kitchen towel, squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, 150 grams of mozzarella cheese, 25 grams of Parmesan cheese, 1 egg, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture into a pizza shape on a parchment-lined baking sheet, about 1 cm thick.
  6. Bake the crust for 20-25 minutes, or until golden brown and firm.
  7. While the crust is baking, prepare the Alfredo sauce. In a saucepan, combine the cream cheese and heavy cream over medium heat, stirring until smooth.
  8. Add garlic powder, Italian seasoning, and remaining salt and pepper to the sauce. Stir in the shredded chicken and let it simmer for 5 minutes.
  9. Once the crust is done, remove it from the oven and spread the Alfredo chicken mixture evenly over the crust.
  10. Top with the remaining mozzarella and Parmesan cheese.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  12. Remove from the oven, garnish with chopped parsley, slice, and serve.
