Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese (shredded) - 200 grams
- Parmesan cheese (grated) - 50 grams
- Cream cheese - 100 grams
- Cooked chicken breast (shredded) - 150 grams
- Heavy cream - 100 ml
- Garlic powder - 1 teaspoon
- Italian seasoning - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - ½ teaspoon
- Black pepper - ¼ teaspoon
- Fresh parsley (chopped) - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower and cut it into florets. Steam the florets until tender, about 8-10 minutes.
- Once steamed, drain the cauliflower and let it cool slightly. Then, using a kitchen towel, squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, 150 grams of mozzarella cheese, 25 grams of Parmesan cheese, 1 egg, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture into a pizza shape on a parchment-lined baking sheet, about 1 cm thick.
- Bake the crust for 20-25 minutes, or until golden brown and firm.
- While the crust is baking, prepare the Alfredo sauce. In a saucepan, combine the cream cheese and heavy cream over medium heat, stirring until smooth.
- Add garlic powder, Italian seasoning, and remaining salt and pepper to the sauce. Stir in the shredded chicken and let it simmer for 5 minutes.
- Once the crust is done, remove it from the oven and spread the Alfredo chicken mixture evenly over the crust.
- Top with the remaining mozzarella and Parmesan cheese.
- Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped parsley, slice, and serve.
