Ingredients

  • Salmon fillets - 2 (about 150g each)
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Asparagus - 150g, trimmed
  • Cherry tomatoes - 150g, halved
  • Lemon slices - 2, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and brush the marinade generously over them.
  4. Arrange the trimmed asparagus and halved cherry tomatoes around the salmon on the baking sheet.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
