Ingredients
- Acorn squash - 1 medium (about 450g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cauliflower rice - 2 cups (about 300g)
- Vegetable broth - 1 cup (240ml)
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped parsley - 2 tablespoons for garnish
Steps
- Preheat your oven to 200°C (400°F). Cut the acorn squash in half and scoop out the seeds. Drizzle with 1 tablespoon of olive oil, salt, and pepper, and place cut-side down on a baking sheet.
- Roast the squash in the preheated oven for 25-30 minutes, until tender. Once cooked, remove from the oven, let cool slightly, then scoop out the flesh into a bowl and set aside.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the cauliflower rice to the skillet and stir in the vegetable broth, thyme, and rosemary. Cook for about 5-7 minutes, until the cauliflower is tender and has absorbed most of the broth.
- Fold in the roasted acorn squash flesh into the cauliflower rice mixture, stirring well to combine. Adjust seasoning with salt and pepper to taste.
- Serve warm, garnished with chopped parsley.
