Ingredients

  • Acorn Squash - 1 medium (about 450g)
  • Coconut Milk - 60 ml
  • Olive Oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Sage - 1 tablespoon, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the squash is roasting, heat the olive oil in a small skillet over medium heat.
  5. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  6. Once the squash is done, remove it from the oven and let it cool slightly before scooping the flesh into a mixing bowl.
  7. Add the sautéed garlic, coconut milk, cinnamon, salt, and pepper to the bowl with the squash.
  8. Mash the mixture with a fork or potato masher until smooth and creamy.
  9. Stir in the chopped fresh sage and adjust seasoning if needed.
  10. Serve warm as a delightful side dish.
