- Acorn Squash - 1 medium (about 450g)
- Coconut Milk - 60 ml
- Olive Oil - 1 tablespoon
- Garlic - 1 clove, minced
- Cinnamon - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Sage - 1 tablespoon, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes, or until tender.
- While the squash is roasting, heat the olive oil in a small skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Once the squash is done, remove it from the oven and let it cool slightly before scooping the flesh into a mixing bowl.
- Add the sautéed garlic, coconut milk, cinnamon, salt, and pepper to the bowl with the squash.
- Mash the mixture with a fork or potato masher until smooth and creamy.
- Stir in the chopped fresh sage and adjust seasoning if needed.
