- Acorn squash - 1 medium (about 450g)
- Olive oil - 1 tablespoon (15ml)
- Onion - 1 small, diced (about 100g)
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced (about 70g)
- Celery - 1 stalk, diced (about 50g)
- Vegetable broth - 2 cups (480ml)
- Coconut milk - 1/2 cup (120ml)
- Ground cinnamon - 1/2 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F). Cut the acorn squash in half, scoop out the seeds, and brush the cut sides with olive oil. Place cut-side down on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
- While the squash is roasting, heat a tablespoon of olive oil in a medium pot over medium heat. Add the diced onion, garlic, carrot, and celery, cooking for about 5-7 minutes until softened.
- Once the acorn squash is cooked, scoop out the flesh and add it to the pot with the sautéed vegetables. Pour in the vegetable broth and bring the mixture to a simmer.
- Add the ground cinnamon, nutmeg, salt, and black pepper to taste. Let it simmer for about 10 minutes to meld the flavors.
- Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a regular blender.
- Stir in the coconut milk and heat the bisque gently over low heat for another 5 minutes. Adjust seasoning as needed.
- Serve the bisque hot, garnished with fresh parsley.
