Ingredients

  • Acorn squash - 1 medium (about 450g)
  • Olive oil - 1 tablespoon (15ml)
  • Onion - 1 small, diced (about 100g)
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced (about 70g)
  • Celery - 1 stalk, diced (about 50g)
  • Vegetable broth - 2 cups (480ml)
  • Coconut milk - 1/2 cup (120ml)
  • Ground cinnamon - 1/2 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F). Cut the acorn squash in half, scoop out the seeds, and brush the cut sides with olive oil. Place cut-side down on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  2. While the squash is roasting, heat a tablespoon of olive oil in a medium pot over medium heat. Add the diced onion, garlic, carrot, and celery, cooking for about 5-7 minutes until softened.
  3. Once the acorn squash is cooked, scoop out the flesh and add it to the pot with the sautéed vegetables. Pour in the vegetable broth and bring the mixture to a simmer.
  4. Add the ground cinnamon, nutmeg, salt, and black pepper to taste. Let it simmer for about 10 minutes to meld the flavors.
  5. Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a regular blender.
  6. Stir in the coconut milk and heat the bisque gently over low heat for another 5 minutes. Adjust seasoning as needed.
  7. Serve the bisque hot, garnished with fresh parsley.
