- acorn flour - 1 cup
- almond flour - 1/2 cup
- baking powder - 1 tsp
- salt - 1/4 tsp
- coconut milk - 1 cup
- eggs - 2 large
- honey - 1 tbsp
- coconut oil - 2 tbsp (for cooking)
Steps
- In a mixing bowl, combine acorn flour, almond flour, baking powder, and salt.
- In another bowl, whisk together coconut milk, eggs, and honey until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Heat a skillet over medium heat and add 1/2 tablespoon of coconut oil.
- Once the oil is hot, pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with remaining batter, adding more coconut oil as needed.
