Ingredients

  • acorn flour - 1 cup
  • almond flour - 1/2 cup
  • baking powder - 1 tsp
  • salt - 1/4 tsp
  • coconut milk - 1 cup
  • eggs - 2 large
  • honey - 1 tbsp
  • coconut oil - 2 tbsp (for cooking)

Steps

  1. In a mixing bowl, combine acorn flour, almond flour, baking powder, and salt.
  2. In another bowl, whisk together coconut milk, eggs, and honey until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  4. Heat a skillet over medium heat and add 1/2 tablespoon of coconut oil.
  5. Once the oil is hot, pour about 1/4 cup of the batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with remaining batter, adding more coconut oil as needed.
  8. Serve warm with your choice of toppings such as fresh fruit or maple syrup.
