Ingredients

  • butternut squash - 300 grams
  • almond flour - 100 grams
  • eggs - 1 large
  • olive oil - 1 tablespoon
  • sea salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • fresh rosemary - 1 teaspoon, chopped
  • zucchini - 100 grams, sliced
  • red bell pepper - 50 grams, diced
  • spinach - 50 grams
  • garlic - 1 clove, minced
  • nutritional yeast - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the butternut squash, then steam or boil until tender, about 15 minutes.
  3. Drain the squash and mash it in a bowl until smooth.
  4. Add the almond flour, egg, olive oil, salt, pepper, and rosemary to the mashed squash. Mix until a dough forms.
  5. Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15 minutes until slightly golden.
  7. While the crust is baking, heat a small skillet over medium heat and sauté the minced garlic in a bit of olive oil until fragrant.
  8. Add the sliced zucchini, diced red bell pepper, and spinach to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
  9. Remove the crust from the oven and evenly distribute the sautéed vegetables over the top.
  10. Sprinkle nutritional yeast over the vegetables for a cheesy flavor.
  11. Return the pizza to the oven and bake for an additional 10-12 minutes.
  12. Once done, remove from the oven, let cool for a few minutes, slice, and serve.
